10 Years and Counting

August 22, 2016

Blue icing, coconut shreds, and birthday cake. What's the connection? My little sister's birthday. She's grown up so fast, I still thought she was 8-years-old. Alas, no, she's turning 10. Double digits. The big 1-0. And as she blew out her birthday candles. I was suddenly reminded of my own self at 10-years-old.

At that time, the biggest change for me was moving to a new school, new city and making new friends, while she was learning how to walk and run. And now as she makes the precarious leap from child to almost tween, I'm making the jump from high school to university.

We find ourselves at the crossroads of change as we head from one phase to the next as my little sis becomes a little less littler and her big sis moves on to somewhere bigger. And someday soon we'll both stand face-to-face (we'll finally be the same height), not one littler than the other, or more experienced than the other, but as two sisters who've seen the world through two different sides of the same coin, but who have shared the same blue icing, coconut shreds and birthday cake.

For the Sweet Tooth: Grilled PB&A Sandwich

August 15, 2016

Sometimes I crave that taste of home. You know, that kind of food that makes you feel warm from the inside out. While it's probably not the best option in Toronto's present blistering hot summer heat wave, it still doesn't dull the craving. So, I packed together some of the homely flavours that just scream "home" every time I eat them (it was also what I happened to have in my kitchen): peanut butter, apple pie (especially the crust) and cinnamon. I made an apple-cinna-butter grilled sandwich, or maybe a peanut-cinnapple butter grilled sandwich, or better yet let's just call it a PB&A. Either way, it's the best of three worlds and makes for one tasty snack.

  • Peanut butter
  • 1 apple
  • 1 tbsp cinnamon
  • 1 tbsp of brown sugar (or white sugar)
  • 4 slices of bread
  • 1/4 cup of butter for grilling

Part I

Wash and peel one apple. Then proceed to slice it in half, then slice each quarter in half once again. Grab a plate and a knife and proceed to smear your desired amount of peanut butter on one side of each of the four slices.

Part II

Place four apple slices on one slice of bread. Repeat with another. Then sprinkle some sugar and then some cinnamon all over the apples. Place the other slice of bread over the apples.

Part III

Melt butter in  a pan and place it on the stove on medium heat. Place each sandwich on the pan, using a spatula to push it flat (to melt the sugar and cinnamon). Once that side if a nice golden brown and well toasted, flip it (add butter as needed). Grill the other side until desired golden hue is achieved. And voilĂ !
