I don't know about you, but in my house, it seems that as soon as bananas cross the threshold they suddenly become even too ripe for monkeys to properly enjoy. We soon face the dilemma of how to consume several bananas in a short amount of time, when only two of the four house residents actually like eating them. As you can imagine, peeling and eating them raw can get pretty old pretty fast, and so I've been forced to become crafty with how I sneak bananas into my diet. The result? A combination of my two favorite things, grilled bananas, and peanut butter. So, enjoy these Peanut Butter and Banana (PB&B) Open Sandwiches.
Ingredients:
- Peanut Butter
- 2 slices of bread
- 1 whole banana
- 2 tbsps of butter
Steps:
- Toast to pieces of bread, spread some peanut butter onto them and then set aside.
- Use a knife to split a banana into four slices (slice it down the middle lengthwise and then again width-wise).
- Put the pan on medium heat, melt the butter and once it starts to bubble a little bit, place the bananas flat side down.
- Grill each side for 2 minutes, adding butter if they begin to stick and flipping when each side becomes golden.
- Using a spatula, place two slices per piece of toast and enjoy!
